WPC 80 or WPI 90: which whey protein to choose

Both come from whey, but they are not interchangeable. The difference is how much protein they contain and everything else that comes with it.
WPC 80
The concentrate contains around 80% protein on a dry basis and keeps some lactose and fat. It has a more noticeable dairy taste and a lower price. It is the base of most shakes and bars.
WPI 90
The isolate exceeds 90% protein, with very little lactose and fat. It costs more and is used in products sold as isolate, in low-lactose formulas and wherever every gram of protein counts.
Instant or regular
The instant version contains lecithin, from soy or sunflower, and dissolves better in shakes that consumers mix at home. The regular version works well in bars, bakery and industrial mixes. Watch out for soy lecithin if your label does not declare that allergen.
